This maybe a stupid question but here goes : Is it possible to still use a onkyo amp with the dts chip fault through the analogue side or does everything go through that processor ?

Not easily. Every signal (both analog and digital) on an Onkyo routes through a chip labeled as "DIR". I call this the "director" and part of its job is to convert analog to digital, it chooses the input based on your selection on the front of the unit and then it pushes it to the DSP on a single pair of traces. I don't believe there is any way to "hot wire" these systems in a way that is useful. I suspect with a couple of hours on the schematics, I could probably figure out how to route a single signal (like the Tuner for example) past the DSP directly to the op amps but I can't think of any way to allow me to switch between multiple analog signals...

Once I have used a Pioneer receiver, with a Philips Bluetooth adapter as an amp.

On some Onkyos if you press BD/DVD + ON/STANDBY you can choose to bypass the HDMI board, which allows you to use it in 2 channel stereo mode, even with a failed DSP.
It's not a fix but it does at least let you still use the receiver for something. It's better than buying a fake chip on Aliexpress anyway.
